Slimming World Syn Free Vanilla Pancakes

Here was the first syn free pancake recipe that I decided to try out with great success. I modified it slightly and I'm so pleased with the results that I thought I'd share them with you.

If you follow Slimming World, then I used the oats as my Healthy Extra B option


Recipe: 
35g oats (Hex B)
150g fat free natural yoghurt 
3 eggs
3 tbsp sweetener
2 tsp vanilla essence
1/2 tsp baking powder


Method:


- Fry light - Soak oats in yoghurt for an hour (or overnight)


- Add eggs, vanilla, sweetener - Blend together with food processor ( other recipes say just to mix it but it way smoother and more of a pancake batter texture if you blitz it up!)


- Spray pan with fry light, add a dollop in the middle of the pan and cook for about 2/3 mins and flip over


- I served mine with frozen berries which I microwaved and added a tiny bit of cornflour to thicken up (1/2 syn if anything) and fat free yogurt. 


Done & Delicious.

They're so quick and easy to make and they really mean you can make your most of your HEX B option as they make 12 pancakes!
